Ingredients
Pasta
- 1 box pasta
Pesto
- 1 cup packed spinach
- 1 cup packed basil
- 1 cup edamame
- 1/2 lemon juiced
- 4 cloves of garlic
- 2 tbsp nutritional yeast
- 1/2 cup olive oil
- vegetable broth or pasta water as needed
Instructions
- Cook the pasta Boil a large pot of water and follow pasta’s cooking instructions.
- Cook the edamame Cook the edamame until tender.
- Blend the pesto Blend the spinach, basil, edamame, garlic, nutritional yeast, and olive oil in a blender or food processor. Add vegetable broth, pasta water, or olive oil to reach desired consistency.
- Mix Strain the pasta and add your pesto, mix. Top with additional protein or vegetables if desired.
