Strawberry Shortcake Chia Pudding

This strawberry shortcake chia seed pudding is a fun and healthy twist on an easy snack. It’s creamy, naturally sweet, and packed with nutrients to keep you feeling full and energized. I love how easy it is to whip up, and you can top it with fresh fruit or granola for an extra treat.

Ingredients


  • 3/4 cup oat milk
  • 1/4 cup yogurt (or non-dairy equivalent)
  • 1 tsp vanilla extract
  • 2 tsp lemon juice
  • 1 tbsp flaxseed meal
  • 3 tbsp chia seeds
  • 1/4 cup strawberries, cut

Instructions


  1. Combine Mix together the oat milk, yogurt, vanilla, lemon, flaxseed, and chia seeds.
  2. Mix Let the pudding sit in the fridge for a couple of hours. Mix the pudding to break up any clumps of chia seeds, you will probably see them clumping at the top and bottom.
  3. Top Top the chia pudding with strawberries and enjoy!
