Breakfast Blueberry Baked Oats

These blueberry baked oats are a great vegan meal prep option—wholesome, filling, and naturally sweet. They’re super easy to make, and you can mix everything together right in the baking pan for minimal cleanup. Perfect for a cozy breakfast or a grab-and-go snack, they’re packed with juicy blueberries and warm, comforting flavors!

Ingredients


  • 2 cups rolled oats
  • 2 bananas, mashed
  • 1 3/4 cups oat milk
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 container of blueberries
  • 3 tbsp maple syrup
  • 6 tbsp non-dairy vanilla yogurt
  • optional: 1/2 cup protein powder
  • optional: 1/4 cup chopped nuts

Instructions


  1. Preheat the oven Preheat the oven to 350°. Grease 9″ x 9″ pan if necessary.
  2. Mix ingredients Combine the oats, bananas, oat milk, baking powder, and optional protein powder directly in your pan.
  3. Add your toppings Top with blueberries, drizzle your maple syrup and yogurt on top. Sprinkle nuts on tope here if desired.
  4. Bake Bake for 35-40 minutes.
