Chocolate Peppermint Cookies

These chocolate mint cookies are a deliciously healthy treat—naturally sweetened, gluten-free, dairy-free, and completely vegan! Made with oat or almond flour, cocoa powder, and creamy almond or peanut butter, they offer a boost of fiber, healthy fats, and plant-based protein. The refreshing peppermint and rich chocolate combo makes them the perfect guilt-free indulgence.

Ingredients


Wet Ingredients

  • 1/2 cup maple syrup
  • 1/3 cup almond or peanut butter
  • 2 tbsp oat milk
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract

Dry Ingredients

  • 1 cup oat or almond flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup mini vegan white chocolate chips

Instructions


  1. Preheat oven Preheat the oven to 350°F and grease a baking sheet.
  2. Mix wet ingredients In a large mixing bowl, whisk together the wet ingredients: syrup, nut butter, milk, and extracts.
  3. Add dry ingredients Add the dry ingredients to the mixing bowl and mix until combined.
  4. Bake Form the cookie dough into tablespoon sized scoops and arrange on the baking sheet with an inch or two of space between cookies. Bake for 10-15 minutes depending on size. Let the cookies cool on the baking sheet for 5 minutes to set properly.
