Ingredients
Wet Ingredients
- 1/2 cup maple syrup
- 1/3 cup almond or peanut butter
- 2 tbsp oat milk
- 1 tsp vanilla extract
- 1 tsp peppermint extract
Dry Ingredients
- 1 cup oat or almond flour
- 1/4 cup cocoa powder
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup mini vegan white chocolate chips
Instructions
- Preheat oven Preheat the oven to 350°F and grease a baking sheet.
- Mix wet ingredients In a large mixing bowl, whisk together the wet ingredients: syrup, nut butter, milk, and extracts.
- Add dry ingredients Add the dry ingredients to the mixing bowl and mix until combined.
- Bake Form the cookie dough into tablespoon sized scoops and arrange on the baking sheet with an inch or two of space between cookies. Bake for 10-15 minutes depending on size. Let the cookies cool on the baking sheet for 5 minutes to set properly.
