Ingredients
- 1 cup flour
- 2 tbsp honey
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup milk (or dairy free alternative)
- 1 egg
- 2 tbsp olive oil
- 1 large lemon, zested and juiced
- 1 1/2 cup blueberries
Instructions
- Mix batter Mix all of the ingredients together in a large mixing bowl.
- Cook pancakes Add olive oil or butter to a large frying pan over medium heat. Pour about a 1/4 cup of batter per pancake into the pan. Cook pancake for 2-3 minutes and flip. Cook both sides until golden.
- Serve Add more blueberries and maple syrup if desired. Enjoy!
