Lemon Blueberry Pancakes

Ingredients


  • 1 cup flour
  • 2 tbsp honey
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup milk (or dairy free alternative)
  • 1 egg
  • 2 tbsp olive oil
  • 1 large lemon, zested and juiced
  • 1 1/2 cup blueberries

Instructions


  1. Mix batter Mix all of the ingredients together in a large mixing bowl.
  2. Cook pancakes Add olive oil or butter to a large frying pan over medium heat. Pour about a 1/4 cup of batter per pancake into the pan. Cook pancake for 2-3 minutes and flip. Cook both sides until golden.
  3. Serve Add more blueberries and maple syrup if desired. Enjoy!
