Ingredients
- 1 package of orzo pasta
- 1 cup basil
- 1/2 cup spinach
- 1 shallot (or half of an onion)
- 1/4 cup nutritional yeast
- 3 cloves garlic
- 1/4 cup of olive oil
- salt to taste
Instructions
- Cook the orzo Cook the orzo for a minute less than package instructions: boil water, add pasta, cook. Reserve 1/2 cup of pasta water for sauce.
- Blend sauce Blend together the basil, spinach, shallot, nutritional yeast, garlic, olive oil, salt, and pasta water.
- Combine Drain the orzo, then put it back in the pot. Add the blended sauce to the pot and cook for 2 minutes on medium heat.
- Serve Top with fresh basil, vegetables, or protein as desired and enjoy!
