Stuffed Bell Peppers

These ground turkey stuffed bell peppers are a favorite for meal prep or weeknight dinners. They’re packed with protein, loaded with fresh veggies, and made with simple, wholesome ingredients—no processed foods here! They’re hearty yet healthy, and you can easily customize with your favorite herbs and spices.

Ingredients


  • 3 bell peppers
  • 1 lb ground turkey
  • 1 yellow onion, diced
  • 3 cloves of garlic, minced
  • 2 cups diced tomato
  • 1/2 cup rice
  • 1 cup chicken broth
  • 1 tsp Italian seasoning or oregano

Instructions


  1. Cook the peppers Preheat the oven to 350°F. Cut the bell peppers evenly in half horizontally. There will be a small hole where the stem is removed, and that’s okay. Place the peppers on a baking tray or dish, brush them with olive oil, and sprinkle on some salt and pepper. Bake the peppers for 20 minutes to soften.
  2. Cook the turkey Heat a large skillet or pot over medium heat with 1 tbsp of oil. Cook the ground turkey.
  3. Add onion and garlic Once the turkey is cooked through, add the onion and garlic. Sauté over medium heat until the onion is translucent and the garlic is fragrant.
  4. Add rice and tomatoes Add the rice, tomatoes, chicken broth, and seasoning to the pan. Salt and pepper to taste. Stir to combine.
  5. Simmer Cover the pot, turn up the heat to medium-high until the mixture reaches a boil, then reduce heat to medium-low and let simmer for 20 minutes without stirring. After 20 minutes, turn off the heat and let it rest covered for an additional 5 minutes.
  6. Stuff the peppers Stir the filling and stuff the peppers all the way to the top. Garnish with parsley if desired.
