Protein Pesto

This protein pesto is a healthy twist on a classic favorite, made without processed ingredients and packed with plant-based protein. The creamy pesto sauce is blended with nutrient-rich greens and lots of garlic for a fresh, satisfying flavor. This pesto is delicious to enjoy with any meal– pasta, chicken, or salads. It’s perfect for a quick, wholesome dinner or meal prep, it’s as nourishing as it is delicious!

Ingredients


Pasta

  • 1 box pasta

Pesto

  • 1 cup packed spinach
  • 1 cup packed basil
  • 1 cup edamame
  • 1/2 lemon juiced
  • 4 cloves of garlic
  • 2 tbsp nutritional yeast
  • 1/2 cup olive oil
  • vegetable broth or pasta water as needed

Instructions


  1. Cook the pasta Boil a large pot of water and follow pasta’s cooking instructions.
  2. Cook the edamame Cook the edamame until tender.
  3. Blend the pesto Blend the spinach, basil, edamame, garlic, nutritional yeast, and olive oil in a blender or food processor. Add vegetable broth, pasta water, or olive oil to reach desired consistency.
  4. Mix Strain the pasta and add your pesto, mix. Top with additional protein or vegetables if desired.
