Ingredients
- 1 3/4 cups flour of choice
- 1 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/3 cup melted coconut oil or olive oil
- 1/2 cup maple syrup
- 2 eggs
- 1/2 cup plain Greek yogurt (or dairy free yogurt)
- 1/2 cup applesauce
- 1 tsp vanilla extract
- 3 apples, grated
Instructions
- Preheat the oven Preheat the oven to 425°. Grease muffin tin if necessary.
- Mix dry ingredients Combine flour, baking powder, cinnamon, baking soda, and salt in a large mixing bowl.
- Mix wet ingredients Combine oil, maple syrup, eggs, yogurt, applesauce, and vanilla in a medium mixing bowl.
- Pour wet ingredients into dry Pour the wet ingredients into the dry ingredients, add the shredded apple, and mix until combined. Make sure not to over mix.
- Bake Pour the muffin batter into the muffin tin and bake for 13 to 16 minutes or until toothpick comes out clean. Remove from the oven and let cool for 5 minutes.
