Ingredients
- 10 pitted dates
- 1 cup smooth peanut butter
- 1/2 cup rolled oats
- 1/2 cup coconut flakes
- 1/4 cup flax seed meal (optional)
Instructions
- Soften and mash your dates Boil water in a small pot. Remove from heat and add your dates. Let sit for 10-30 minutes, then mash your softened dates.
- Blend the oats Add the oats and about half of the coconut flakes to a blender or food processor. Blend until you have a flour-like consistency.
- Combine ingredients In a medium sized bowl, mix the mashed dated, oat flour, peanut butter, and flax seed meal until combined.
- Roll into balls Form the mixture into balls and roll in remaining coconut flakes. Freeze or refrigerate and enjoy as a healthy, protein-filled snack.
