Orzo Verde

This orzo verde is my comfort meal that I turn to again and I again. It’s fresh, flavorful, and comes together in just 20 minutes—perfect for a quick and satisfying meal. The vibrant green sauce is made with basil, spinach, garlic, and nutritional yeast for a cheesy, herby flavor without any dairy. It’s simple to make, packed with nutrients, and tastes like something you’d get at a restaurant.

Ingredients


  • 1 package of orzo pasta
  • 1 cup basil
  • 1/2 cup spinach
  • 1 shallot (or half of an onion)
  • 1/4 cup nutritional yeast
  • 3 cloves garlic
  • 1/4 cup of olive oil
  • salt to taste

Instructions


  1. Cook the orzo Cook the orzo for a minute less than package instructions: boil water, add pasta, cook. Reserve 1/2 cup of pasta water for sauce.
  2. Blend sauce Blend together the basil, spinach, shallot, nutritional yeast, garlic, olive oil, salt, and pasta water.
  3. Combine Drain the orzo, then put it back in the pot. Add the blended sauce to the pot and cook for 2 minutes on medium heat.
  4. Serve Top with fresh basil, vegetables, or protein as desired and enjoy!
