Healthy Apple Muffins

These healthy apple muffins are naturally sweet, perfectly moist, and sugar-free! Made with wholesome ingredients, they’re a delicious and nourishing option for breakfast or as a yummy snack.

Ingredients


  • 1 3/4 cups flour of choice
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup melted coconut oil or olive oil
  • 1/2 cup maple syrup
  • 2 eggs
  • 1/2 cup plain Greek yogurt (or dairy free yogurt)
  • 1/2 cup applesauce
  • 1 tsp vanilla extract
  • 3 apples, grated

Instructions


  1. Preheat the oven Preheat the oven to 425°. Grease muffin tin if necessary.
  2. Mix dry ingredients Combine flour, baking powder, cinnamon, baking soda, and salt in a large mixing bowl.
  3. Mix wet ingredients Combine oil, maple syrup, eggs, yogurt, applesauce, and vanilla in a medium mixing bowl.
  4. Pour wet ingredients into dry Pour the wet ingredients into the dry ingredients, add the shredded apple, and mix until combined. Make sure not to over mix.
  5. Bake Pour the muffin batter into the muffin tin and bake for 13 to 16 minutes or until toothpick comes out clean. Remove from the oven and let cool for 5 minutes.
